Appassimento romagna D.O.C. Sangiovese
This expressive Appassimento is made from 100% Sangiovese, sourced from the del Castello di Monteleone vineyard at an altitude of 360 meters. Planted in 1998, the vineyard lies on a southeast-facing slope and is cultivated using the double Guyot system. The grapes are hand-harvested into small crates designed for the drying process, with the drying period varying depending on the vintage.
After harvest, the wine ages for 30 months in large, untoasted French Allier oak barrels (10hl), which imparts a natural and gentle oak character without overpowering the wine.
The result is a wine with a deep red color and a bouquet that reveals a varied and complex palette of fruit and floral notes. On the palate, it is smooth and well-balanced, with finely structured tannins and a persistent, savory finish. With a powerful alcohol content of 16%, this is an impressive wine that pairs beautifully with rich dishes.
