This refined sparkling rosé is made from 100% Sangiovese, sourced from the ‘del Castello di Monteleone’ vineyard, located at an altitude of 360 meters and planted in 1998. The south to southeast exposure and cultivation using the cordone speronato system ensure perfectly ripe and aromatic grapes. The manual harvest guarantees careful selection, after which the grapes are vinified as a white wine to create an elegant, fresh base wine.

Following the first fermentation, the wine rests on fine lees for six months, adding extra texture and complexity. The spumante then undergoes a second fermentation in the bottle using the Metodo Classico. Each bottle matures for at least 30 months on its own lees, followed by remuage, disgorgement, and a final refinement period of six months.

With an alcohol content of 12%, this rosé offers a fresh, elegant mousse and a complex, gastronomic style. Zavalloni Rosé Metodo Classico is a sparkling expression of Sangiovese, ideal as a refined aperitif or paired with light dishes.
